Jumbo Roaster - Pastured Traditional Chicken
These are very large chickens which make for a beautiful roasted presentation. Here at home we brine (see article) our roasters for 24 hours prior to cooking. Then we pat them down, rub them with olive oil and season. We will also fill the cavity with halved lemon and rosemary if we have it on hand. We then slow roast at 275 degrees for 3 hours, covered. We remove the bird, pour off the rendered juices into a sauce pan, replace the chicken and cook for another hour uncovered, until brown. We like to simmer the renderings during the last hour with a quarter cup of honey to make a glaze for the finished chicken. Just simmer until it begins to thicken, strain and a knob of butter - drizzle over the roasted bird. AMAZING! We bet it will be the best chicken you've ever had.
These birds are Cornish Cross (traditional) chickens which are tender and juicy. They are large enough to make a great alternative to a small holiday turkey.
Our meat birds are fed only organic, non-GMO feed. All our birds are processed humanely in a state inspected facility. We personally transport them from our farm to the processor and back.
