Teres Major-Wagyu (the shoulder tender)
This cut comes from the shoulder or chuck of the steer, and is a cut that you won't find in your local grocery store. It's sometimes called the "mock or petite tender", because it resembles a smaller version of the tenderloin roast, where filet mignon comes from. It's often cooked whole, medium rare and served sliced like a tenderloin. Another great use of this cut is to butterfly the loin, stuff it with herbs and cheese and roll it before grilling.
